Assemble the Food Processor bowl onto the power unit.
Fit the Fine Grating Disc attach the Express Serve lid and ensure it is locked into place.
Place a medium bowl underneath the Express Serve Attachment.
Grate one half of the courgette into the medium bowl using the pusher.
Repeat the same with the remaining half.
Use your hands or a cloth to squeeze out the excess water from the courgette.
Remove the Express Serve Attachment and the Fine Grating Disc and set aside.
Assemble the Food Processor attachment to the machine.
Fit the Knife Blade to the Food Processor bowl.
Add the spring onions and fresh basil into the Food Processor bowl.
Attach the lid and ensure it is locked into place.
Mix on speed 1 for 5 seconds until thoroughly sliced.
Transfer the chopped spring onions and basil into the medium bowl containing the courgettes.
Add the eggs, lemon zest, flour, baking powder and seasoning into the medium bowl.
Mix until well combined with the courgette.
Spoon 1 Tbsp of the fritter mixture onto the prepared baking tray, space apart evenly.
Use the back of a spoon to flatten each fritter.
Bake at 180°C for 20 minutes.
Remove from oven and let cool in the tin for 10 minutes.
Once cooled, remove the fritters from the tin.
Retrieve and clean the Food Processor bowl.
Assemble the Food Processor attachment to the machine.
Fit the Knife Blade to the Food Processor bowl.
Add the red pepper, red onion, garlic, olive oil, caster sugar, seasoning and mozzarella cheese into the Food Processor bowl.
Attach the lid and ensure it is locked into place.
Mix on speed 1 for 30 seconds until thoroughly combined.
To Serve
Serve with roasted red pepper dip and basil leaves.
Serve hot or cold.
