Ingredients

540g three threes apple sauce
1/3 cup grape seed oil (or any flavourless oil)
1/3 cup brown sugar
1/3 cup castor sugar
1 1/2 tablespoons vanilla paste
1/4 teaspoon salt
2 cups flour
1 1/2 teaspoons bicarbonate of soda (baking soda)
1 tablespoon (each) spice mixture: nutmeg (dry spice), cloves (dry spice), cinnamon (dry spice), and ginger (dry spice)
3 apples (peeled, cored, and diced)
1/3 cup margarine
1/3 cup oat milk
1/4 cup white miso paste

Method

1 - Preheat oven to 190°c.
2 - Add 540g of apple sauce into your Chef XL Titanium KVL8300S kitchen machine.
3 - Add in some grape seed oil (or any flavourless oil) into the mixer.
4 - Next, add in brown sugar, castor oil, and vanilla paste.
5 - Mix together.
6 - Whilst that is mixing, get a bowl with flour, bicarb, salt, nutmeg, cloves, cinnamon, ginger, and mix it together.
7 - Stop mixer to add in the dry ingredients.
8 - Toss apples in some flour and fold apples into the batter.
9 - Pour batter into a baking tin and place it in the oven.
10 - Bake for approximately 60 minutes.
11 - While the cake is in the oven, make the vegan miso caramel.
12 - In a pan, spread out some castor sugar to cover the bottom of the pan and let it melt. *Important: do not stir the sugar because it will start to crystallise.*
13 - In the same pan, once the sugar has melted, add in some margarine and using a whisk, let it all melt together while gently mixing.
14 - Add in some oat milk and white miso paste, mix gently.
15 - Once the cake is out of the oven, place on a serving plate and gently pour the caramel over the top of the cake, letting it run down the sides of the cake.
