Sardine Fritters with Tzatziki

Ingredients

Servings: 4
Makes: 8

160 g canned sardines, packed in oil, drained, roughly chopped
242 g canned cannellini beans
1  egg
18 g breadcrumbs, can be made from blended old stale bread
80 ml extra virgin olive oil
120 g salad leaves
250 g tzatziki
1  lemon, cut into wedges


Instructions

STEP 1/5

In the Kenwood MultiPro Go, blend drained sardines and beans.

Add egg and breadcrumbs and blend again.

STEP 2/5

Form the mixture into small fritters, using approximately 1 to 2 Tbsp per fritter.

Flatten each fritter slightly.

STEP 3/5

Heat the oil in a large non-stick skillet over medium-high heat.

Once hot, add the fritters.

STEP 4/5

Cook for two mins on each side.

Drain on a paper towel and let cool. 

Work in batches if needed.

STEP 5/5

To serve

Serve the fritters with salad leaves, tzatziki and lemon wedges.
