Cookies & Cream Ice Cream

Ingredients

  • 600ml full cream milk 
  • 1 vanilla pod 
  • Vanilla essence 
  • 4 egg yolks 
  • 150g (5oz) caster sugar 
  • 200g (7oz) crème fraîche 
  • 2 cups roughly chopped chocolate cookies

  1. Pour the milk into a heavy based saucepan, add the vanilla pod and bring to a gentle simmer. Do not boil. Remove from heat and set aside for 10 minutes before removing vanilla pod. 
  2. Attach the whisk to your Kenwood Chef Sense kitchen machine. Place egg yolks and sugar into the bowl. Place on high speed for 2 minutes or until light and pale in colour. 
  3. Reduce the speed to medium. Slowly pour in the milk over a 2 minute period. Once combined, strain mixture back into the pan. 
  4. Cook over a low heat, stirring continuously, until thick enough to coat the back of a wooden spoon. Do not boil. Leave to cool then chill. Mix the vanilla custard and crème fraîche together. 
  5. Place the Frozen Dessert Maker with the frozen bowl in position and switch to minimum speed. Pour the liquid ice cream mix through the feed tube. Add half of the cookies. Churn until ice cream resembles freshly whipped cream. 
  6. Add remaining cookies and churn for a further 2 minutes. 
  7. Serve immediately in ice cream cones. Or place in a plastic container and keep frozen, until required. Soften slightly in the fridge or at room temperature, before serving.
