115g bulgur wheat
2 tbsp. lemon juice
4 tbsp. olive oil
Salt and freshly ground black pepper
40g flat leaf parsley
25g fresh mint
3 plum tomatoes, diced
¼ cucumber, diced
6 spring onions, finely sliced

Serves: 4
Preparation time: 10 minutes plus 1 hour soaking and standing
Cooking time: 15 minutes

What is Tabbouleh?

This Levantine Arab salad is traditionally served as part of a mezze and has today become a popular ethnic dish in Western Cultures. The main ingredients include bulgur, tomato, cucumber, onion and garlic and is a refreshing accompaniment to meat dishes.


  1. Place the bulgur wheat in a bowl, cover with hot water and leave to soak for 1 hour, then drain and squeeze dry.
  2. Add the lemon juice and olive oil and season with salt and pepper. Place the parsley and mint in the Food Processor and chop using the Knife Blade. If using the Multi-Mill process in batches.
  3. Add the herbs to the bulgur wheat with the tomatoes, cucumber and spring onions and stir to blend. Serve immediately or leave to infuse, covered, for 2-3 hours or even overnight if time allows.
