Ingredients

For Italian Meringue
4 egg whites
240g sugar

For Swiss Meringue
4 egg whites
300g sugar

To serve
Whipped cream
Fruits

What is Meringue?

Meringue can serve as a base for a wide range of desserts but is just as delicious on its own. The popular confection is associated with Swiss and French cuisine and is sweet in taste, but very light and airy.

Method

Prepare one of the meringue variations below.

Then, place the contents into a piping bag and pipe 10cm circles onto a piece of grease proof paper. Place into a cool (100°C/200°F/Gas ¼) oven for 2 hours or until dry. 

Serve with whipped cream and fruits.

Variations

Italian Meringue

  1. Attach the Power Whisk. Place the ingredients into the bowl.
  2. Set the speed to 1 for 1 minute, just to allow the contents to combine. Set the temperature to 120°C and the speed to 3 pressing the pulse button. When this temperature is reached hold it there for 2 minutes to ensure the content is heated evenly. Turn the temperature off.
  3. Press the pulse button and set the speed to maximum. Whisk the mixture for 17 minutes or until the temperature reaches 45°C. Take the bowl off the machine and either use immediately or reserve in the fridge until ready to use.

Swiss Meringue

  1. Attach the Power Whisk. Place the ingredients into the bowl. Set the temperature to 60°C, press the pulse button and set the speed to maximum. When the temperature is reached hold it at that for 2 minutes to ensure the ingredients are heated evenly. Turn the temperature off.
  2. Press the pulse button and set the speed to maximum. Whisk the mixture until the temperature reaches 35°C. Take the bowl off the machine and either use immediately or store in the fridge until ready to use.

Cook Tips: Leave the Meringue in the oven with the door open for 1 hour before serving.
