5 eggs
190g caster sugar
25g brown sugar
A pinch of salt (¼ tsp)
225g flour
2½ tsp baking powder
30g cocoa powder
2½ tbsp clear honey
75g melted butter
A few drops of vanilla essence to taste

What are Madeleines?

This is a traditional small cake from the north-east regions of France. The delicate cakes have distinctive shell-like shapes and the flavour is similar to, although lighter, than sponge cake.


  1. Attach the Power Whisk and beat the eggs, sugars and salt until pale. Combine the flour and baking powder and fold into the egg mixture. Pour in the cocoa, honey, butter and vanilla essence, and mix.
  2. Place into a piping bag and pipe into a madeleine mould, then bake in a preheated oven set at 200ºC/400°F/Gas 6 for 10 minutes.
