No Bake Cheesecake

  • Serves: Up to 6 people


  • 50g Butter 
  • 8 Digestive biscuits
  • 220g Cream cheese
  • 400g Whipping cream
  • 50g Sugar
  • 2 tsp Vanilla extracts

Cheesecake base:

  1. Melt the butter 
  2. Place the digestive biscuits into the food processor
  3. Process until they are broken up into small crumbs
  4. Add the melted butter to the biscuits
  5. Press the biscuits into the base of a glass
  6. Place in the fridge to set

Cheesecake top: 

  1. Place cream cheese into a bowl
  2. Add whipping cream, sugar and vanilla extracts
  3. Beat until the mixture thickens (Be careful not to over beat the mexture)
  4. Spread the mixture evenly over the biscuit base
  5. Place in the fridge to set
  6. Remove the glasses from the fridge
  7. Top with your chosen sauce and serve
