This recipe will work with any meat, but beef or lamb will give particularly good results. You can safely use cheaper cuts, and adjust the spices to suit your taste. Remember, the secret with braising is to cook your meat gently.

Lasagne all Bolognese
1 quantity of basic pasta (see recipe in this section)For the ragoût:2 cups onions1 cup celery1 cup carrot1 cup tomatoes2/3 lb pancetta1 1/3 lb beef (preferably from the skirt)1/3 cup tomato purée1/3 cup red wine1 cup milk
SeasoningParmesan cheese, to sprinkleFor the lasagne recipe, add:1 cup of Béchamel sauce (see recipe in "Basic Recipes" section)
