Tomatillo Pico de Gallo

  • 2 cups tomatillos, medium chopped
  • 1 cup red onion, (1/2 onion) medium chopped
  • ¼ cup cilantro, finely chopped

 Pumpkin Guacamole

  • 1 cup pumpkin puree
  • 3 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/3 tsp ground nutmeg
  • 6 tbsp brown sugar
  • 6 ripe avocados
  • 1 tbsp lemon juice
  • 1 cup pico de gallo
  • 1 tbsp of hot sauce
  • salt to taste

Preparation time:  20 minutes
Yields: 2 cups

  1. Start with the cilantro in the chopper on high speed until finely chopped. Remove from chopper and set aside in small bowl.
  2. Cut the tomatillos in 4s and the red onion into 4s. Using the Chopper attach the Triblade Sure Grip handle using the speed of 4 and the turbo button to blend until medium.
  3. Add the tomatillo and onion mixture to the cilantro in the bowl, toss and set aside.
  4. In another bowl add the pumpkin puree, the spices and brown sugar, combine using the Triblade attachment until smooth.
  5. Next cut the avocados in half. Scoop out the avocados and put into a large bowl, using the Puree Masher attachment, mash the avocados until smooth. Then add the lemon juice to keep the avocados from going dark.
  6. You can now switch back to the Triblade attachment and add in the pico de gallo, pumpkin mixture. Add in the hot sauce and salt. Garnish with toasted pumpkin seeds if desired. Serve with chips or sliced vegetables.
