These small sponge cakes are piped into special Madeleine moulds to create their shell-like shape. 

Preparation time:  10 minutes
Cooking time: 10-12 minutes
Serves: 20

  1. Attach the Power Whick and beat the eggs, sugars and salt until pale. Combine the flour and baking powder and into the egg mixture. Pour in the honey, butter and vanilla essence, and mix.
  2. Place into a piping bag and pipe into madeleine mold, then bake in a preheated oven set at 400°F for 10 mins.


Eggs 5
7/8 cup powdered sugar
2 tbsp brown sugar
A pinch of salt (1/4 tsp)
2 1/4 cups flour
2 1/2 tsp baking powder
2 1/2 tsp honey
1/3 cup melted butter
A few drops of vanilla essence to taste
