A floating island is a French dessert consisting of meringue floating on a creme anglaise (vanilla custard).

Preparation time:  1 minute
Cooking time: 10-15 minutes
Serves: 4

Attachments: Power Whisk, Flexi Beater


  1. Attach the Flexi Beater.
  2. Add the sugar and the egg yolks to the bowl and beat on speed 4, until the mixture is light and pale.
  3. Set the temperature to 185°F and the speed to 1.
  4. Add the milk.
  5. When the temperature is up to 185°F, continue set the ti;er for 5 minutes and continue cooking, still stirring at speed 1. Temp: 185 °F Speed: 1 Time : 5 minutes
  6. Check the custard has tickened, put in the fridge.


Sauce Anglaise :
Egg yolks 6
Milk (whole milk preferably) 3 cups
Sugar 3/4 cup
Floating Island:
Eggs (white only) 3
Sugar 1/4 cup
Salt 1 pinch
