Slow cooker


  1. Mix the salt, sugar and ginger together and rub well into the pork joint.
  2. Heat the olive oil in a frying pan and seal the meat on all sides.
  3. Place the pork into the slow cooker and turn on to high.
  4. Mix together the sauce ingredients and pour over the pork.
  5. Cook for 1hr on high, spoon the sauce over the meat to keep moist.
  6. Turn the slow cooker down to low and cook for 4-5 hours spooning the sauce over the meat once or twice during cooking time.
  7. Remove the pork from the slow cooker and place in a warmed dish.
  8. Pour the sauce into a pan remove the bay leaves and reduce to ½ the quantity. The sauce will thicken and become glossy.
  9. Carve the pork into thick slices and serve with the sauce.

Serving suggestion:
Great with jacket potatoes, corn cob, coleslaw and green salad.


1 ½ kg pork joint – fat removed
1tsp salt
1tsp sugar
1tsp ground ginger
20ml olive oil

2tbs tomato ketchup
2tbs mushroom ketchup
3tbs Worcestershire sauce
2tbs redcurrent jelly
1tbs soft brown sugar
1tsp vinegar
2 crushed garlic cloves
2 bay leaves
