Toffee Meringue Bars

Oven (MO690)

50g butter
120g dark brown sugar
1 egg
1/2 tsp vanilla essence
65g plain flour
1/2 tsp salt

1 egg white
1/4 tsp salt
1 tbsp golden syrup
90g caster sugar
50g chopped walnuts

1. Combine butter and dark brown sugar in a saucepan and heat until bubbling

2. Beat egg and vanilla essence and add in to sugar mixture. Sift plain flour and sale into mixture and heat until well combined.

3. Use an 8" x 8" square tray and line with greaseproof paper. Pour mixture and flatten to make base.

4. For topping, whisk egg white and salt until it holds soft peaks. Add golden syrup and sugar and continue whisking until mixture is stiff. Manually fold in chopped walnuts. Spread evenly on top of sugar base.

5. Preheat oven to 170ºC and bake for 30 - 35 minutes, or until golden brown.

6. Cool before cutting.
