SPICED CORNFLAKES CRUNCHIES Makes about 80pcs Appliances Used Chef KMC550, Oven MO690 Ingredients 210g butter 180g caster sugar 2 egg yolk 180g self-raising flour 1/2 tsp cinnamon powder 1/2 tsp mixed spice 150g cornflakes (crushed) 100g cherries (cubed) 100g chopped almonds Method 1. Place butter and caster sugar into Kenwood stainless steel bowl. Use K-beater to cream until light and fluffy. 2. Add in egg yolks and mix evenly. 3. Sift flour, cinnamon powder and mixed spice into mixture and mix evenly. 4. Add cornflakes, cherries and chopped almonds into mixture and mix evenly. 5. Preheat oven at 180ºC. 6. Shape dough onto greaseproof baking tray and bake for 20 mins, or until light brown. 7. Serve when cool.
