Durian Puffs

Makes about 50 puffs

Dough Ingredients

300g self raising flour

6 large eggs

220g butter

420 water


Filling ingredients

500g durian flesh (meshed)

100ml milk

1 tbsp custard powder

50g caster sugar (optional)


50g icing sugar for dusting


Method - Fillings

1. Blend durian flesh in a food processor until meshed

2. Cook the durian in a saucepan stirring continuously

3. Add custard powder into milk and str evenly

4. Pour in the mixture to the durian and cook a little longer

5. Leave to cool

6. Cut the ready puffs sideways and stuff some durian filling into it. Sift icing sugar on top before serving

7. Can be served chilled


Method - Puffs

1. Boil water and butter in a saucepan

2. Add in the flour and stir until it becomes a soft dough

3. Transfer to a stainless steel mixing bowl

4. Use 'K' beater and add n eggs one at a time

5. Beat all ingredients evenly

6. Preheat oven at 180 degree Celsius

7. Line baking tray with greaseproof paper

8. Pipe 2 to 3 rounds of the batter for each puff onto the greaseproof paper and bake for about 25 minutes per tray

9. Leave to cool
