Banana Nut Muffins                                                                                                                              Makes about 7 big muffin cups or 24 mini muffin cups

Ingredients                                                                                                                                           2 Egg Whites
150g Caster Sugar
45ml Vegetable Oil
225g Mashed Banana
1 Grated Lemon Peel
190g Plain Flour
2 tsp Baking Powder
½ tsp Sodium Bicarbonate
¼ tsp Salt
½ tsp Banana Essence
100g Chopped Walnuts

Method &nbssp;                                                                                                                                                 1. In a mixing bowl, use balloon whisk to whisk egg whites with sugar
until sugar melts.

2. Add in the vegetable oil and whisk evenly. Gradually pour in the
mashed banana, lemon peel and banana essence and continue to
mix until well combined.

3. Sift flour, baking powder, sodium bicarbonate and salt into the mixture
and mix well.

4. Finally fold in the chopped walnuts into the batter.

5. Preheat oven at 170º C .

6. Prepare muffin cups and fill batter to ⅔ of the muffin cup.

7. Place muffin cups on a baking tray and bake for about 25 to 30
minutes per tray.
