Marshmallow Peach Slice

Crust Ingredients

300g digestive biscuit

80g butter or margarine


Filling Ingredients

220g white marshmallow

180ml milk

300ml thickened cream

1 tsp vanilla essence


Topping Ingredients

1 packet konnyaku jelly powder

1250ml water

1/2 tsp peach essence

1/2 tsp peach colouring

1 can peach slice



1. Chop digestive biscuits until crushed and mix in butter. Mix evenly

2. Line base of a 9" removable base cake tin with aluminium foil

3. Pour crushed biscuit mixture onto base and press tightly. Leave aside.

4. Pour milk into a saucepan to boil. Add in the marshmallows and stir until marshmallow melts

5. In another bowl, whisk thickened cream until thick

6. Fold in to mix together with marshmallow mixture

7. Pour mixture onto the ready biscuit base. Chill

8. Boil 1250ml water and pour in the konnyaku powder. Stir continuously until slightly thickened

9. Add in the essence and colour. Stir well and cool slightly

10. When marshmallow is set. Arrange peach slices on top and pour cooled konnyaku powder

11. Place ready cake to chill completely before serving
