Oven Temp : 180 deg C

  Ingredients                                                                                                     170 gm unsalted butter at room temp 3 large eggs
1 cup sugar 1 tsp vanilla extract
¾ cup unsweetened cocoa powder ½ cup sour cream
¾ cup flour
½ tsp baking powder
¼ tsp salt
3 large eggs
1 tsp vanilla extract
½ cup sour cream

  Method                                                                                                          1. Grease a 8-inch (20cm) cake pan; line bottom with baking paper.                                                                                                                

2. Butter paper; dust with cocoa powder, tapping out excess; set aside.
                                                                                                                         3. In a medium bowl, sift together cocoa, flour, baking powder and salt set aside.
4. In a mixing bowl, cream butter and sugar until light and fluffy.
                                                                                                                       5. Beat in eggs, one at a time, then add in the vanilla. Reduce speed to low.
                                                                                                                       6. Add flour mixture alternating with sour cream, starting and ending with the flour mixture.
                                                                                                                       7. Spread batter into prepared pan. Tap pan firmly on countertop several times to force out large air bubbles.
                                                                                                                       8. Bake until a toothpick inserted in center comes out clean, 30 to 35 minutes.
                                                                                                                        9. Remove from oven, Cool 10 minutes in pan, then invert onto a wire rack to cool completely (bottom side up). 
                                                                                                                               10. Set rack over a rimmed baking sheet. Pour glaze over; spread gently to coat entirely. Let stand until set.

Optional : Garnish with chocolate shavings. Serve with whipped cream.

Chocolate glaze
4 ozs semisweet chocolate (chopped) ½ cup heavy cream
1. Place chocolate in a bowl.

                                                                                                                                 2. In a saucepan, bring cream to boil.

3. Pour over chocolate and whisk until smooth   

4. Let cool for 2 – 3 mins or until thicken yet able to pour onto cake.
