Butter Cake with Chocolate Chips

(makes an 8” cake)

450g butter
340g sugar
250g self raising flour
85g plain flour
5 eggs
Vanilla essence
Optional: 2 tbsp chocolate chips or chocolate rice

1) Grease and floured cake pans or tins. Preheat oven to 175 - 180C.

2) Using K-beater, cream butter with sugar at low speed until well mixed before increasing speed to high. Beat until light and fluffy. Slowly add eggs, one at a time.

3) Sift self raising flour with plain flour. Mix well. Fold into butter mixture.

4) Add vanilla essence. Bake in oven for 55 to 6o mins until cooked or until a toothpick comes out clean when inserted in the middle of the cake.

5) Tip: You can also bake in smaller containers but baking time will be shortened.
