Ingredients

Servings: 8
Makes: 1

2  olive oil


150 g onions, peeled, finely sliced
1  garlic clove, peeled, stem removed, crushed
1  red chilli, desseded, finely chopped
150 g red pepper, deseeded, cut into 1 cm cubes
150 g green pepper, deseeded, cut into 1 cm cubes
100 g celery, trimmed, cut into 1 cm cubes
140 g chestnut mushrooms, brush cleaned, roughly chopped
  salt, to taste
  pepper, to taste


40 g tomato puree
1  chipotle paste
2 tsp. ground coriander
2 tsp. ground cumin
2 tsp. dried oregano
1 tsp. chilli powder
1 tsp. smoked paprika


250 g canned red kidney beans, drained, rinsed
800 g tinned chopped plum tomatoes
460 g tinned green lentils, drained, rinsed
150 g vegetable stock, hot
30 g tomato ketchup
1 tsp. yeast extract


15 g dark chocolate, finely chopped
15 g fresh coriander, destalked, finely chopped
2  lime juice


Instructions

STEP 1/7

Lift the Cooking Chef head and fit the heat shield

Fit the Stir tool to the machine

STEP 2/7

Attach the Cooking Chef bowl to the machine and fit the Stir assist clip

Add Ingredients 1 (oil) into the Cooking Chef bowl, do not fit the splash guard

Cook at 120ºC on speed stir 1 for 1 minute

STEP 3/7

Add Ingredients 2 (vegetables, mushrooms, seasoning) to the bowl

Cook at 120ºC on speed stir 1 for 4 minutes

STEP 4/7

Add Ingredients 3 (tomato puree, chipotle paste, spices) into the Cooking Chef bowl

Cook at 120ºC on speed stir 1 for 2 minutes.

STEP 5/7

Add Ingredients 4 (beans, tomatoes, lentils, stock, ketchup, yeast) into the bowl, fit the splash guard

Cook at 120ºC on speed stir 1 for 5 minutes

Cook at 98ºC on speed stir 1 for 15 minutes

STEP 6/7

Add the optional ingredients (dark chocolate, coriander, lime juice) to the bowl

Mix on speed min for 1 minute until combined

STEP 7/7

Serve with rice
