Stout and Chocolate Cupcakes

These rich and delicious cakes are topped with a light cream cheese frosting.

Ingredients

250 ml stout
250 grams unsalted butter
75 grams cocoa powder
400 grams caster sugar


150 grams sour cream
2  eggs
1  vanilla extract


275 grams plain flour
2.5 tsp. bicarbonate of soda


300 grams cream cheese
150 grams icing sugar
125 ml whipping cream


Instructions

STEP 1/6

Melt the butter.

STEP 2/6

Fit the K beater to the machine.

Pre heat the oven to 180ºC.

Line the cupcake tin with cupcake cases.

STEP 3/6

Add Ingredients 1 (stout, butter, cocoa powder, caster sugar) into the Mixer bowl.

Attach the Mixer bowl to the machine and fit the splash guard.

Mix on speed 1 for 2 minutes.

STEP 4/6

Add Ingredients 2 (sour cream, eggs, vanilla) to the bowl.

Mix on speed 2 for 1 minute.

STEP 5/6

Add Ingredients 3 (flour, bicarbonate of soda) into the bowl.

Mix on speed 2 for 1 minute.

Evenly spoon the batter into the cupcake cases.

Bake for 15 minutes at 180ºC.

Leave to cool on a wire rack.

STEP 6/6

Retrieve, clean the Mixer bowl and fit the Whisk tool.

Add Ingredients 3 (cream cheese, icing sugar, cream) into the Mixer bowl.

Attach the Mixer bowl to the machine and fit the splash guard.

Mix on speed 5 for 1 minute.

Spoon the icing onto the cakes.

Serve.
