Red Cabbage Slaw

An easy side to make and very versatile. Use the rest of the mayonnaise however you like.

Ingredients

Servings: 8
Makes:

5  egg yolks
1 tsp. Dijon mustard
1.5  white wine vinegar
0.5 tsp. lemon juice
280 ml groundnut oil


100 grams carrot
150 grams onion


200 grams red cabbage


10  chives


Instructions

STEP 1/6

Peel and trim the carrot.

Peel, trim and quarter the onion.

Finely chop the chives.

Core the cabbage and cut into wedges.

STEP 2/6

Fit the Food processor with Knife blade to the machine.

STEP 3/6

Add the first 4 of Ingredients 1 (yolk, mustard, vinegar, lemon juice) into the Food processor.

Start the machine on speed 2.

Carefully pour the last of Ingredients 1 (oil) into the food processor while it is running.

Mix until the mixture has thickened.

Pour the mayonnaise into a medium bowl.

STEP 4/6

Clean the Food processor and fit the Thick slicing disc.

Slice Ingredients 2 (carrot, onion).

STEP 5/6

Change the disc to the Thin slicing disc.

Slice Ingredients 3 (cabbage).

Transfer vegetables into a large bowl.

Add 5 tbsp of the mayonnaise and toss until combined.

Add more mayonnaise if desired.

Serve.

STEP 6/6

Sprinkle with the chives.
