A simple loaf with lots of flavour and texture. Soda bread is a good starting point if you want to try bread baking as it requires no yeast and no proving.
Preheat oven to 200ºC. Flour a baking tray. Fit the Dough Tool. Place grated courgette in a tea towel or muslin cloth and squeeze out all excess liquid. Add the courgette, flour, baking powder, soda, 60 g grated cheddar, thyme, buttermilk and honey into the appliance bowl. Mix – 3 minutes, speed Min.
Transfer the dough into a lightly floured work surface and knead lightly. Gently pull the edges into the centre. Roll the dough over and shape into a round loaf. Place the dough on a baking tray. Brush with egg and sprinkle with 15 g grated cheddar cheese. Bake at 200ºC for 40 minutes. Remove from the oven and let cool.

Substitutions:
Cheddar cheese can be replaced with Comté or Gruyère cheese. Thyme can be replaced with fresh rosemary or 1 tsp dried thyme.
