  1. Preheat the oven to 190°C/375°F/Gas 5. Cut the potatoes into 4cm (1½ inch) cubes and put them in the potato peeler. Peel until the potatoes become rounded with a fluffy texture.
  2. Heat the olive oil in a roasting tin for 5 minutes in the oven. Rinse and dry the potato balls then spoon them into the roasting tin, tossing in the oil to coat completely.
  3. Season liberally with salt and freshly ground black pepper and bake for 30 minutes, until well cooked and golden. Sprinkle with garlic and cook for a further 5 minutes. Serve immediately.
