Brett McGregor’s Thai Fish Cakes

  • 500g white fish fillets
  • 2 shallots
  • 2 spring onions
  • 1 cup coriander
  • 3 tbsp red curry paste
  • 1 tsp salt
  • 2 tbsp lime juice
  • 1 egg white
  • peanut oil for frying
  •  lime wedges to serve


  1. Place the fish, shallots, spring onions and coriander into a processor.
  2. Blitz until smooth, then add the curry paste, salt, lime juice and blend until well combined.
  3. Finally add the egg white and process.
  4. Divide the mix into small cakes and shallow fry until golden and cooked through.
