Sweet Potato Patties

¼ Sweet Potato 

1 can (400g) Chickpeas 

1 (small) Onion 

1 clove Garlic 

1 Chilli (to taste)

10g Coriander 

1 tsp Cumin Ground 

3-4 tbsp Chickpea Flour

1 Lime (juice of)


Makes 6-8 patties

Time: 55 minutes

  1. Place the JUICE FILTER into the Kenwood PureJuice Pro.
  2. Ensure the sweet potato and carrots are at room temperature.
  3. Clean both ingredients.
  4. Peel the sweet potato and cut to fit the feed tube.
  5. Juice the carrot and sweet potato.
  6. Reserve the juice for another use and tip the pulp into a large mixing bowl.
  7. Drain and rinse the chickpeas.
  8. Place in a saucepan with cold water.
  9. Cook the chickpeas for 5-7 minutes on a high heat.
  10. Then drain the chickpeas and leave to cool slightly.
  11. Peel the onion and garlic, and then finely chop both.
  12. Sauté the onion and garlic on a medium heat in a frying panuntil softened.
  13. Finely chop the coriander.
  14. De-stalk and de-seed the chilli, then finely chop.
  15. Add the lime juice and all the rest of the ingredients to the carrot and sweet potato pulp.
  16. Use a masher to combine all together until a rough paste forms.
  17. Shape the mixture into patties and leave to chill for 20 minutes.
  18. To cook the patties, heat the rapeseed oil up in a shallow pan.
  19. Cook each of the patties for 3-4 minutes on each side or untilgolden brown.
  20. Serve with salad and a pita bread or bun.
