Spelt Flour Bread

  • 450g spelt grain flour
  • 1.5 tsp salt 
  • 1.5 tsp (1 sachet) instant dried yeast 
  • 2 tbsp sunflower oil 
  • 1 tsp honey 
  • 400ml lukewarm water 


  1. Begin by preparing and oiling a 900ml loaf tin.
  2. Fit the grain mill attachment to the front, slow speed outlet on your kitchen machine. Set the grain mill to the finest setting and mill the spelt grain straight into the bowl, on speed 1.
  3. Remove the grain mill attachment and the bowl from the machine. 
  4. Add the rest of the ingredients in with the spelt flour and fit the bowl back onto the machine. Then attach the dough hook. Switch the machine on to minimumspeed and let the mixture come together into a soft, sticky dough. Increase the speed to speed 1 and knead the dough for around 5 minutes. Remove the bowl and cover with  cling film and leave somewhere warm for around  1 hour, or until doubled in size.
  5. Re-attach the bowl and knead, using the dough hook, on minimum speed for around 30-60 seconds, to knock back. Transfer the dough to the prepared loaf tin, trying to smooth the top a little, as the dough will still be sticky.
  6. Cover the dough with oiled cling film and leave to rise again, for around 30 minutes.
  7. Whilst the dough is rising, preheat the oven to 190˚C. 
  8. Bake the bread on a central shelf for around  40 minutes, until the bottom of the bread sounds hollow when tapped. Cool on a wire rack.
