Decadent Chocolate Mousse

  • 200g dark chocolate 
  • 60ml warm water 
  • 3 large eggs, separated 
  • 40g caster sugar 


  1. Add the chocolate and water to a heatproof bowl over a pan of barely simmering water. Allow to melt slowly, stirring regularly. Remove the bowl and allow to cool for 2-3 minutes before stirring in the egg yolks.
  2. Place the egg whites into the bowl of your kitchen machine, fitted with the balloon whisk. Whisk on maximum for 30-45 seconds until soft peaks form (do not over whisk).
  3. With the machine still running, add the sugar  one third at a time and whisk until the mixture  is glossy.
  4. Fit the machine with the folding tool and gently pour the chocolate mixture into the egg white. Switch the machine to speed 1 and fold in the  chocolate mixture to the egg whites until incorporated (maximum 60 seconds). Any unprocessed mix should be gently folded in  by hand.
  5. Divide the mixture between serving glasses, cover with cling film and chill in the fridge for  at least 2 hours.
