Steamed Salmon with dill cream sauce

Ingredients:
1 Small onion
250ml Cold milk
1 Tbsp Vegetable oil
3 Tbsp finely chopped dill
1 Tbsp Cornflour
Salt and pepper, to taste
1 Tbsp Water
6 Salmon fillets
1 Fish stock cube
Preparation Method:
1.
Mix the water and cornflour together to make a paste then add this to the milk and set aside. Attach the processing blade to the bowl. Peel the onion and chop into chunks. Add to the bowl and fit the lid. Press and hold down the chop button for 15 seconds. Remove the lid and replace the processing blade with the stirring paddle.
2.
Press the 'Soup/Sauce' button.

Add the oil to the bowl, scrape down the sides using the spatula and fit the lid. Press the start/pause button to start cooking.
Time: 10 minutes

Once this stage has finished it will automatically switch into the "keep warm cycle" for 30 minutes. To stop the "keep warm cycle" press the start/pause button and the unit will pause. Add the fish stock cube, double cream, seasoning and cornflour mixture to the bowl. Fit the lid and press the start/pause button to continue cooking, adjust the time to 10 minutes.
Time: 10 minutes

Again the machine will automatically switch into the "keep warm cycle". Press the cancel button to stop the cooking. Remove the lid and add the finely chopped dill to the sauce. Replace the lid and keep the sauce warm while you prepare the salmon. Manually set the machine to stir speed 1, heat 1. You will also need to add some time by pressing to begin the "keep warm cycle".
For the salmon, brush with oil and then add to a pan, skin side down. Fry for 4-5 minutes, then turn the salmon over and fry for another 4-5 minutes or until cooked through.

When you are ready to serve, press the cancel button to stop the keep warm cycle. Serve the salmon with a generous dollop of sauce and accompany with new potatoes or seasonal vegetables.
Chef's tip
Remove excess water from salmon by pressing the fillets between 2 sheets of kitchen towel.
Pea & Parma Ham Risotto

1 Small onion
100g Frozen peas
2 Tbsp Vegetable oil
4 slices Parma ham
360g Arborio oil
Salt and pepper, to taste
3 Tbsp Dry white wine
2 Tbsp Grated parmesan cheese
700ml Hot Chicken stock
Preparation Method:
1.
Attach the processing blade to the bowl. Peel the onion and chop into chunks. Add to the bowl and fit the lid. Press and hold down the chop button for 15 seconds. Remove the lid and replace the processing blade with the stirring paddle.
2.
Press the 'One Pot' button.
3.
Add the oil to the bowl, scrape down the sides using the spatula and fit the lid. Press the start/pause button to start cooking, adjust the cooking time to 5 minutes.
Time: 5 minutes.
Once this stage has finished it will automatically switch into the "keep warm cycle" for 30 minutes. To stop the "keep warm cycle" press the start/pause button and the unit will pause. Add the rice and wine to the bowl. Fit the lid and press the start/pause button to continue cooking, adjust the time as per step one to 5 minutes.
Time: 5 minutes.
Again the machine will automatically switch into the "keep warm cycle". To pause the machine, press the start/pause button. Remove the lid and add the chicken stock and frozen peas to the bowl. Fit the lid and press the start/pause button to continue cooking, adjust the time as per step one to 13-15 minutes.
Time:13-15 minutes.
When this stage has finished and the machine has switched into the "keep warm cycle" press the cancel button to stop cooking. Cut the Parma ham into strips and stir into risotto using the spatula.
4.
Check the seasoning, place onto serving dishes and top with grated parmesan cheese.
Chef's tip
Properly cooked risotto is rich and creamy but still with some bite.
Leek & Potato Soup

Ingredients:
1 Medium onion
1 Vegetable stock cube
1 Garlic clove
750ml Boiling water
1/2 Celery stick
2 Tbsp Thyme
3 Leeks
Salt and pepper, to taste
1 Tbsp Vegetable oil
40g Crème fraiche
2 Medium potatoes
Preparation Method:
1.
Attach the processing blade to the bowl. Peel the onion and garlic and chop into chunks along with the leeks and celery. Add to the bowl and fit the lid. Press and hold down the chop button for 15 seconds.
Remove the lid and replace the processing blade with the stirring paddle.
2.
Press the Soup/Sauce button.
3.
Remove the lid and add the oil to the bowl, scrape down the sides using the spatula and fit the lid. Press the start/pause button to start cooking.
Time: 10 minutes.
Once this stage has finished it will automatically switch into the "keep warm cycle" for 30 minutes. To stop the keep warm cycle press the start/pause button and the unit will pause. Peel the potatoes and cut into 2cm cubes then add them to the bowl with the water, stock cube, thyme and seasoning. Fit the lid and press the start/pause button to continue cooking.
Time: 15 minutes.
4.
Once the machine has finished it will automatically switch into the "keep warm cycle", this time press the cancel button to stop cooking.
To blend to a smoother consistency press and hold the chop button for 2 to 3 seconds, once you take your finger off the button it will maintain the speed for 2 minutes then automatically stop. To prevent the hot liquid splashing the chop function speed will increase gradually. Season if necessary and pour into serving bowls. Finish with a generous dollop of crème fraiche.
Chef's tip
For extra flavour, finish with a sprinkle of fresh parsley.
White Wine Chicken Casserole

Ingredients:
1 Medium onion
4 Chicken breasts
1 Garlic clove
4 Slices back bacon
1 Red pepper
100g Button mushrooms
4 Tbsp Plain flour
2 Tbsp Thyme
50ml White wine
2 Tbsp Parsley
1 Chicken stock cube
Salt and pepper, to taste
250ml Cold water
Preparation Method:
1.
Attach the processing blade to the bowl. Peel the onion and garlic and chop into chunks. Add to the bowl and fit the lid. Press and hold down the chop button for 15 seconds.
Remove the lid and replace the processing blade with the stirring paddle.
2.
Press the 'One Pot' button.
3.
Remove the lid and add the oil to the bowl. Destalk and deseed the pepper, cut it into slices and add to the bowl. Scrape down the sides of the bowl using the spatula and fit the lid. Press the start/pause button to start cooking.
Time: 10 minutes.
Once this stage has finished it will automatically switch into the "keep warm cycle" for 30 minutes. To stop the keep warm cycle, press the start/pause button and the unit will pause. Remove the lid and add the flour to the bowl. Fit the lid and press the start/pause button to continue cooking. Adjust the time to 5 minutes.
Time: 5 minutes.
Again the machine will automatically switch into the "keep warm cycle". To pause the machine, press the start/pause button. Remove the lid and add the white wine to the bowl. Fit the lid and press the start/pause button to continue cooking and adjust the time as per step four to 10 minutes.
Time: 10 minutes.
When this stage has finished press the start/pause button to cancel the "keep warm cycle" and pause the unit. Wash the mushrooms and add to the bowl. Cut the chicken and bacon into 1 ½ cm pieces and add to the bowl, along with the stock cube, water, mushrooms, thyme, chopped parsley and seasoning. Fit the lid and press the start/pause button to continue cooking and adjust the time as per step four to 30 minutes.
Time: 30 minutes.
4.
Once the machine has finished it will automatically switch back into the keep warm cycle, this time press the cancel button to stop cooking. Check the chicken is cooked; if it is not you can continue cooking for a few more minutes. Season if necessary and serve with boiled rice or couscous.

For extra flavour, finish with a sprinkle of fresh parsley.
Bolognese Sauce

Ingredients:
1 Red onion
400g Lean mince beef
1 Celery stick
200g Chopped tomatoes
1 Carrot
4 Tbsp Milk
2 Garlic cloves
1 Bay leaf
1 Tbsp Vegetable oil
Salt and pepper, to taste
2 Tbsp Tomato puree
Preparation Method:
1.
Attach the processing blade to the bowl. Peel the onion, carrot and garlic and chop into cubes along with the celery. Add to the bowl and fit the lid. Press and hold down the chop button for 15 seconds.
2.
Remove the lid and replace the processing blade with the stirring paddle.
3.
Select your programme Press the 'Soup/Sauce' button
4.
Add the oil and tomato puree to the bowl, scrape down the sides using the spatula and fit the lid. Press the start/pause button to start cooking. Time: 10 minutes.
5.
Once this stage has finished it will automatically switch into the "keep warm cycle" for 30 minutes. To stop the keep warm cycle press the start/pause button and the unit will pause. Add the minced beef, tomatoes, milk and bay leaf to the bowl. Fit the lid and press the start/pause button to continue cooking, adjust the time to 35 minutes. Time: 35 minutes. Once finished it will automatically switch into the "keep warm cycle", this time press the cancel button to stop cooking. Serve with cooked tagliatelle.

Got leftovers?
Why not make a chilli con carne? Add a handful of kidney beans, a teaspoon of cumin and a pinch of chilli powder, and reheat!
