55g butter
450g strong bread flour
7g instant yeast
70g caster sugar
a pinch of salt
1 egg (medium, beaten)
FILLING:
110g curd cheese or cottage cheese
110g ricotta cheese
40g caster sugar
BERRY FRUIT TOPPING:
300g fresh fruit (cherries [pitted], raspberries, or blueberries)
150g icing sugar
GLAZE:
1 egg (beaten)

METHOD:
10. Once completely cool, top the buns with the berry topping, with as little juice from the fruit as possible.
