Feta and Mint Scones

  1. Preheat the oven to 220°C, 425°F, Gas Mark 7. Place the flour, baking powder, salt and butter in the bowl. Fit the dough hook and blend on speed 1 for 1 minute, until well combined.
  2. Add the remaining ingredients and blend on speed 1 for 1 minute, until well combined and formed into a soft dough.
  3. Turn out onto a floured surface, knead lightly and roll to 1cm (1/2 in) thick. Using a 6cm (2 1/2 in) round cutter, cut out 12 -14 circles. Place on a lightly oiled baking sheet well spaced apart and bake for 10 -15 minutes, until well risen and golden. Serve warm with butter.


350g (12oz) self- raising flour, sifted
7.5ml (11/2 tsp) baking powder
pinch of salt
75g (3oz) butter, room temperature
60ml (4 tbsp) fresh chopped mint
150g (5oz) feta cheese, crumbled
1 egg
150ml (1/4 pt) milk
