For the burgers

  • 500g turkey breast fillets, cut into large dice
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp chilli powder
  • 1 tsp salt
  • 1 egg
  • 3 tbsp panko breadcrumbs
  • 2 tbsp vegetable oil
  • 4 brioche burger buns, toasted

For the guacamole

  • 1 large ripe avocado
  • 100g cherry tomatoes, halved
  • Small bunch coriander, leaves picked
  • 1 red chilli, deseeded and roughly chopped
  • 1 lime, juice
  • Salt and pepper

  • Fit the mincer attachment with the small grinding plate and attach to the front slow outlet of your kitchen machine.
  • Pass the diced turkey through the mincer attachment and add the turkey mince to the bowl of the kitchen machine, fitted with the K-Beater attachment. Add the spices and seasonings, egg, and breadcrumbs to the turkey mince, and run the machine on speed 1 for a couple of minutes, or until the ingredients are evenly distributed and the mixture has come together.
  • Divide the mixture into 6 and shape into patties. Cover and chill for 30 minutes.
  • Whilst the burgers are chilling, make the guacamole. Place all ingredients into your food processor attachment, fitted to the top high-speed outlet on your kitchen machine, and pulse together into a chunky guacamole. Be careful not to over-process.
  • Heat the vegetable oil in a pan set over a medium heat and fry the burgers for around 8 minutes on each side, until cooked through. Serve on toasted buns, topped with a big dollop of the guacamole.
