Mango Fruit Fool

Can be made with these products:


  • 3 ripe mangos, stones removed
  • 300ml whipping cream (chilled)
  • 100g low-fat Greek yogurt
  • 30g icing sugar


  1. Peel the mangos and cut into large chunks.
  2. Fit the knife blade. Place one roughly chopped mango into the food processor bowl. Process using the pulse until a fine chop is achieved. Remove the knife blade and empty chopped mango into a separate bowl.
  3. Replace the knife blade in the food processor bowl and place the remaining mango into the bowl. Put the lid on and process on speed 3 until a purée is formed. Reserve the puréed mango in a bowl.
  4. Clean the food processor bowl and insert the drive shaft and whisk attachment. 
  5. Tip the chilled whipping cream into the food processor bowl and fit the lid. For best results remove pusher from lid to allow maximum aeration. Process on max speed until soft peaks are achieved.
  6. Remove the whisk attachment.
  7. Add 150g of mango purée followed by the Greek yogurt and the icing sugar to the food processor bowl.
  8. Add the folding tool attachment to the bowl. Replace the lid and process the mix at speed 1 or 2 until the yogurt, icing sugar and fruit purée are combined. Remove the lid and folding tool.
  9. Layer the fool into serving glasses with the remaining fruit purée and chopped mango.
  10. Eat immediately or refrigerate for 1-2 hours.
