Carrot and Onion Bhajis

  • 1 green chilli, deseeded and finely chopped 
  • Small bunch coriander leaves, picked and finely chopped 
  • 100g gram flour 
  • Half tsp chilli powder 
  • Half tsp ground cumin 
  • Half tsp baking powder 
  • Half tsp salt 
  • 1 large onion, peeled and quartered 
  • 1 carrot, peeled and trimmed 
  • 120ml cold water 
  • Vegetable oil, for cooking


  1. Begin by preheating your oven to 200˚C.
  2. Add the chilli, coriander, gram flour, spices, salt and baking powder to the bowl of your kitchen machine, fitted with the K-beater. Switch the machine on to speed 1 and pour in the water to make a thick batter. 
  3. Attach the roto food cutter, fitted with the coarse shredding drum, to the top, slow speed outlet of your kitchen machine. Place the bowl of batter under the outlet chute of the roto cutter.
  4. Trim the vegetables to fit down the feed tube of the roto cutter. Switch the machine to speed 3 and shred the vegetables straight into the batter in the bowl.
  5. Once the vegetables are all shredded, mix with the batter to coat and combine.
  6. Oil a baking tray and drop spoonfuls of the mixture onto the tray. Drizzle a little oil over the tops of the bhajis and bake in the preheated oven for 15 minutes, then flip the bhajis over and cook for a further 10 minutes.
