Caribbean Tea Bread

Makes 1 large loaf


  1.  Add the melted butter, milk and eggs to the bread pan.
  2.  Sift the flour, baking power and salt together. Stir in the caster sugar, desiccated coconut and tropical fruits. Add all the ingredients to the bread pan.

tsp = 5ml teaspoon 
tbsp = 15ml tablespoon


50g butter, melted 
170ml milk 
2 eggs, lightly beaten 
280g plain flour 
1tbsp baking powder 
Salt - pinch 
115g caster sugar 
25g Desiccated coconut 
75g Ready to eat dried tropical fruits corasely chopped
