Banana & Cinnamon Tea Bread

  1. Place the butter, syrup and sugar into a small saucepan and heat gently until melted, stirring occassionally. Leave to cool slightly then pour into the bread pan.
  2. Mash the bananas and add to the bread pan with the eggs, creme fraiche and milk.
  3. Sift the flour, baking powder and bicarbonate of soda and cinnamon together. then add to the bread pan.

For a banana, date and walnut tea bread add 40g chopped dates and 40g chopped walnuts, after scraping down after 6 minutes.

tsp = 5ml teaspoon
tbsp = 15ml tablespoon


115g butter 
200g golden syrup  
50g light soft brown sugar 
280g plain flour 
2tsp baking powder  
1tsp bicarbonate of soda 
1/2tsp ground cinnamon  
200g peeled ripe bananas
2 eggs
85g creme fraiche
60ml milk
