A beautiful braided bread made from enriched dough and topped with pearl sugar.

Method

  1. Line a clean baking sheet with parchment paper
  2. Attach Spiral Dough Tool
  3. Add milk, dried yeast, sugar, cake flour, butter, egg and salt to the Kenwood Bowl
  4. Mix then scrape bowl - 5 min, Speed 2
  5. Add unsalted butter to the Kenwood Bowl bit by bit while machine is running
  6. Mix then scrape bowl - 5 min, Speed 2
  7. Mix - 5 min, Speed 2
  8. Cover with kitchen towel
  9. Prove - 1 hr 30 min
  10. Carefully transfer the dough from the Kenwood mixer bowl to a lightly floured work surface
  11. Gently pull the edges into the centre
  12. Roll the dough out to elongate
  13. Divide into 3 equal pieces
  14. Cover with kitchen towel
  15. Let rest - 10 min
  16. Pre-heat oven - 200°C
  17. Roll out each dough piece into a long even rope
  18. Plait the 3 dough ropes
  19. Tuck the ends underneath to secure
  20. Place plait on lined baking sheet
  21. Brush with egg
  22. Sprinkle with pearl sugar
  23. Bake - 30 min, 200°C
  24. To check if the loaf is cooked, gently tap the bottom of the loaf. If the bread sounds hollow it's cooked, place it on a cooling rack. If not place it back in the oven for a few minutes
  25. Serve
