This is a quick and easy dessert that you can enjoy as a dish in its own rightor use its zingy flavours to accompany a little French tart or even a chocolate mousse.
Preparation time: 5 minutes
Cooking time: 10 minutes
Equipment: 4-6 dessert bowls
- Attach the whisk and add the egg yolks, sugar, white wine and lemon juice.
- Turn the temperature to 90°C and turn to speed 5. Hold down the pulse (P) button until it double beeps (this will ensure the machine hits a high temperature at a high speed). Once you hear the beeps, whisk the mixture at this temperature for three minutes.
- Turn the temperature off and continue to whisk until the temperature drops to 30 - 40°C.
- Pour the mixture into bowls and serve.
