1 galia melon, peeled
3 lemon cucumber, peeled
1 pt yellow cherry tomatoes, halved
6 small yellow tomatoes, halved
½ clove garlic, crushed
¼ red onion, sliced
1 gypsy bell pepper, sliced and deseeded

½ cup fruity olive oil
Volpaia white wine vinegar (to taste)
Salt (to taste)
Tabasco (splash) 

Serves: 6

  1. Combine all the ingredients and let them sit over night.
  2. Blend all ingredients together with the Tri-Blade hand blender, re-blend and re-season with salt, vinegar and Tabasco to taste.
  3. If desired garnish with basil buds, pickled watermelon, watermelon, melon pearls, cucumber pearls and fruity olive oil.
