Ingredients

Servings: 6
Makes: 1

280 g whole wheat flour, plus extra for dusting
180 ml water, warm
10 g ghee, melted


3  garlic cloves, peeled
5 cm ginger, peeled
1  red chilli, deseeded
2 tsp. ghee, or olive oil
1  onion, diced
1 tsp. ground coriander
2 tsp. ground tumeric
2 tsp. curry powder
200 g tinned chopped tomatoes
450 g pumpkin, or butternut squash peeled and cut into 2cm cubes
400 g red lentils, rinsed and drained
1000 g vegetable stock, hot


  salt, to taste
  pepper, to taste
  fresh coriander, Destalk the coriander.


Instructions

STEP 1/4

Lift the Cooking Chef head and fit the heat shield.

Fit the Spiral dough tool to the machine.

STEP 2/4

Attach the Cooking Chef bowl to the machine.

Add the first two items of Ingredients 1 (flour, water) into the Cooking Chef bowl, fit the splash guard.

Mix on speed 1 for 10 minutes.

Start the speed on Min and gradually increase speed.

Or use the Dough Kneading preset if applicable.

Transfer the dough to a medium bowl and set aside.

Let rest for 30 minutes

After 30 minutes, transfer the dough to a lightly floured work surface.

Divide the dough into 12 equal pieces.

Roll each piece into a ball flatten slightly.

Then use a rolling pin to roll out into a large circle as thin as possible.

Place a large frying pan over a high heat.

Cook each chapati for around 2 minutes until lightly browned.

Flip over and cook on the other side

Place on a serving plate.

Brush with the last item of Ingredients 1 (melted ghee).

Repeat the same with the remaining dough pieces.

Cover with a tea towel until ready to serve.

STEP 3/4

Assemble the Food Processor attachment to the machine.

Add the first three items of Ingredients 2 (garlic, ginger, chilli) into the mill.

Attach the blade assembly and screw onto the jar. Ensure it is securely closed. 

Attach the mill to the power unit and ensure it is locked into place.

Blend on high speed until a paste formed.

Remove the mill jar and set aside.

Retrieve, clean the Cooking Chef bowl and fit the Stir Tool. Fit the Heat Sheild

Attach the Cooking Chef bowl to the machine, fit the stir assist clip.

Add the fourth item of Ingredients 2 (ghee) into the Cooking Chef bowl.

Cook at 130°C on speed Stir 1 for 1 minute.

Add the next item of Ingredients 2 (onion) into the Cooking Chef bowl.

Add the garlic, ginger and chilli paste into the bowl.

Cook at 120°C on speed Stir 1 for 6 minutes.

Add the next four items of Ingredients 2 (coriander, cumin, turmeric, curry powder) into the Cooking Chef bowl.

Cook at 110°C on speed Stir 1 for 3 minutes.

Add the next item of Ingredients 2 (chopped tomatoes) into the Cooking Chef bowl.

Cook at 105°C on speed Stir 1 for 6 minutes.

Add the remaining Ingredients 2 (pumpkin, lentils, vegetable stock) into the bowl.

Season to taste.

STEP 4/4

Serve with fresh coriander and homemade chapati.
