Pineapple and Coconut Traybake

An easy moist and tropical traybake with a lemon drizzle inspired icing. If you’re making this cake just for adults swap some of the juice in the icing for rum.

Ingredients

Servings: 12

350 grams butter
350 grams golden caster sugar
5  eggs
275 grams plain flour
3.5 tsp. baking powder


425 grams pineapple
100 grams desiccated coconut


85 grams caster sugar
3  pineapple juice
1  lime juice


Instructions

STEP 1/5

Coarsely chop the pineapple into small chunks.

STEP 2/5

Fit the K beater to the machine.

Pre heat the oven to 180ºC.

Line the traybake tin with parchment paper.

STEP 3/5

Add Ingredients 1 (butter, sugar, eggs, flour, baking powder) into the Mixer bowl.

Attach the Mixer bowl to the machine and fit the splash guard.

Mix on speed 1 for 2 minutes .

STEP 4/5

Add Ingredients 2 (pineapple, coconut) into the Mixer bowl.

Mix on speed 1 for 1 minute .

Transfer the batter to the traybake tin.

Bake for 40 minutes at 180ºC.

STEP 5/5

Add Ingredients 3 (sugar, pineapple juice, lime juice) into the small bowl.

Mix until combined.

Using a skewer, poke holes into the hot cake and pour the sugar mixture over the top.

Leave to cool in the traybake tin.

Cut into squares.

Serve.
