Hot Cross Bun and Butter Pudding

This twist on a classic pudding is a great dessert for Easter dinner or just to use up and leftover buns.

Ingredients

Servings: 6

300 g whipping cream
600 ml milk


4  egg, beaten
100 g golden caster sugar
1.5 tsp. vanilla extract


8  hot cross buns, sliced in half
40 g butter


100 g marzipan, cut into 5mm cubes
3  marmalade


  icing sugar, as needed


Instructions

STEP 1/6

Preheat the oven to 170ºC

Fit the Whisk tool to the machine

STEP 2/6

Add the first two items of Ingredients 1 (cream, milk) into a medium saucepan

Heat over a medium-high heat until warm

Be careful not to boil the milk

Remove from the heat and set aside

STEP 3/6

Add Ingredients 2 (eggs, sugar, vanilla) into the Mixer bowl

Attach the Mixer bowl to the machine and fit the splash guard

Mix on speed 5 for 2 minutes until combined and reduce the speed

While the machine is running, gradually add the warm milk mixture into the Mixer bowl

Mix on speed 2 for 30 seconds or until combined

Transfer the mixture back into the saucepan

Cook over a medium-high heat for 5-8 minutes until thickened, stirring constantly

Remove the custard from the heat and set aside

Cover with parchment paper to prevent a skin forming

STEP 4/6

Place the first item of Ingredients 3 (hot cross buns) on a cutting board

Slice in half

Spread with the remaining Ingredients 3 (butter)

STEP 5/6

Place the buns upright in two rows in the baking dish

Sprinkle with the first item of Ingredients 4 (marzipan)

Brush with the last item of Ingredients 4 (marmalade)

Bake at 170ºC for 50 minutes

Remove from the oven and let cool slightly

STEP 6/6

Dust with icing sugar
