Pea Soup

Made with these products:


  1. Fit the slicing blade to the food processor and slice the onion and leek.
  2. Melt the butter in a pan and add the chopped onion and leek and cook for 10 minutes on a medium heat.
  3. Shell the peas and add the peas to the pan.
  4. Then add the white wine and allow to reduce by at least half, then add the stock, bring to the boil and cook for 20 minutes or until the peas are cooked.
  5. Take the pan off the heat and stir in the chosen herb, allow to cool slightly, then place into the liquidiser and puree. For a smoother soup pass through a sieve and finish with a dash of cream.
  6. Top with some juliennes of sorrel or chervil to finish.


  • 25gm butter
  • 2 onions
  • 1 leek
  • 1kg fresh peas in their pods - 400g shelled
  • 1 litre of ham or vegetable stock
  • 100ml white wine
  • Seasoning
  • 2 tbsp sorrel or mint chopped leaves
