  • ¾ cup fresh carrot juice, top and tailed (3-4 carrots)
  • ¼ cup fresh carrot pulp
  • 1 ¼ cups milk
  • 1/4 cup coconut oil, melted
  • 1 ¼ cups all-purpose flour
  • 1 ¼ cups rice flour
  • 2 tablespoons baking powder
  • pinch sea salt
  • 300 grams ricotta
  • 1-2 tablespoons of icing sugar
  • Dash of cinnamon


  1. Blend carrots with scroll juicer, separating pulp and juice
  2. In mixing bowl, whisk together carrot juice, pulp, milk and coconut oil
  3. Add flours on top of wet ingredients, do not mix in. Fold in baking powder, sea salt, flour into the carrot milk mixture
  4. Pour batter onto prepared (oiled, sprayed) hot
    waffle iron, cook per iron instructions
  5. Clean out bowl and, using the creaming beater,
    combine ricotta, cinnamon and icing sugar
  6. Serve waffles hot with cinnamon ricotta and honey
