  • 5 eggs
  • 190g caster sugar
  • 25g brown sugar
  • ¼ teaspoon salt
  • 225g plain flour
  • 2½ teaspoons baking powder
  • 2½ tablespoons clear honey
  • 75g melted butter
  • ¼ teaspoon vanilla essence

These small sponge cakes are piped into special Madeleine moulds to create their shell-like shape. 

Preparation time: 10 minutes
Cooking time: 10-12 minutes

  1. Preheat oven to 200c/ 400f/ Gas 6
  2. Attach the Power Whisk and beat the eggs, sugars and salt until pale
  3. Combine the flour and baking powder and fold into egg mixture
  4. Pour in the honey, butter and vanilla essence and mix
  5. Place into a piping bag and pipe into madeline molds and bake for 6-10 minutes or until just starting to colour
