Sauce Anglaise :

  • Egg yolks 6
  • Milk (whole milk preferably) 800ml
  • Sugar 180g

Floating Island

  • Eggs (white only) 3
  • Sugar 40g
  • Salt 1 pinch

A floating island is a French dessert consisting of meringue floating on a creme anglaise (vanilla custard).

Preparation time:  1 minute
Cooking time: 10-15 minutes
Serves: 1 litre

Attachments: Power Whisk, Flexi Beater


  1. Attach the Flexi Beater.
  2. Add the sugar and the egg yolks to the bowl and beat on speed 4, until the mixture is light and pale.
  3. Set the temperature to 85°C and the speed to 1.
  4. Add the milk.
  5. When the temperature is up to 85 °C, continue set the ti;er for 5 minutes and continue cooking, still stirring at speed 1. Temp 85 °CSpeed 1Time : 5 minutes
  6. Check the custard has tickened, put in the fridge.
