  • 2 medium onions
  • 2 large carrots, trimmed
  • 2 celery stalks, trimmed 
  • 500g potato, peeled 
  • 500g pumpkin, peeled, seeds removed 
  • 1 bay leaf 
  • 2 tablespoons olive oil
  • ¼ cup tomato paste
  • 2 cups cauliflower, cut into florets 
  • 4 cups vegetable stock 
  • 3 cups water
  • 1 cup frozen peas
  • 2 tablespoons chopped fresh dill
  • Salt and freshly ground black pepper, to taste

  1. Attach Dicing attachment to the high speed outlet of your Kenwood kitchen machine. 
  2. Using the Dicing attachment; process onions, celery, potato, pumpkin and cauliflower. Make sure to keep all vegetables in separate bowls. Set aside.
  3. Heat oil in a large saucepan over medium heat. Add onion, carrot, celery and bay leaf. Cook for 8-10 minutes or until golden and tender. 
  4. Add tomato paste and cook for 1 minute. Add potato, pumpkin, cauliflower, vegetable stock and water to the pan. Cook for 15-20 minutes or until vegetables are tender. 
  5. Add frozen peas. Cook for a further 2-3 minutes or until peas are hot. Season to taste with salt and pepper. Serve topped with fresh dill. 

    HINT: You can puree half of the soup, if desired.
