  • 2 cups plain flour
  • ½ cup water
  • ¼ cup olive oil
  • ¼ cup sesame seeds
  • 2 tablespoons poppy seeds
  • 1 tablespoon fresh thyme, chopped
  • 2 teaspoons sea salt


  1. Make sure you have a baking tray lined with baking paper. Preheat oven to 180c. 
  2. Attach the Dough Hook to your Kenwood kitchen machine.
  3. Add all ingredients to the bowl.
  4. Using the variable speed control, place on low speed for 2-3 minutes or until a smooth ball. If it’s a bit tacky add a teaspoon of flour, if its not forming a ball add 1 teaspoon more of water.
  5. Cut the dough in half. Cover the remaining half with plastic wrap.
  6. Remove the bowl and dough hook.
  7. Attach the Kenwood Flat Pasta Roller to the SLOW outlet. Make sure the dial is set to setting 1.
  8. Flatten the dough with the palm of your hand.
  9. Turn the machine onto low speed. Slowly feed the dough through the rollers, folding the dough and feeding through again, until smooth. You may need to sprinkle with flour.
  10. Once smooth adjust the dial on the pasta roller to setting 2 and roll through twice, continue increasing the setting until you get to setting 5.
  11. Cut into desired shapes for crackers and place on lined baking tray.
  12. Place in oven for 8-10 minutes or until golden. Set aside.
