Chocolate Mousse

  • 150ml Double cream
  • 180g Dark chocolate (cocoa solids minimum 55%)
  • 60g Butter
  • 4 Egg whites
  • 40g Caster sugar

Preparation: 10 minutes
Serves: 4-5
Tools: Glass bowl, splash guard, whisk and folding tool

  1. Attach the glass bowl, whisk and splash guard to your Kenwood kitchen machine. 
  2. Add the cream to the bowl and whisk on high speed until soft peaks. Place into separate bowl, cover and refrigerate. 
  3. Melt the chocolate and butter in a bowl over a pan of simmering water.  Take care not to overheat the chocolate. 
  4. Add egg whites to the clean glass bowl. Whisk on high speed until soft peaks formed.  
  5. With the machine still operating, slowly add the sugar over a 2 minute period. Continue to whisk until all sugar granules have dissolved. 
  6. Remove the whisk and attach the folding tool. Add the cream mixture to the bowl and place on low speed. Mix until smooth. Add the chocolate mixture and mix until a solid chocolate colour. 
  7. Place into individual dishes and refrigerate for 1hr.  Serve chilled.
